Butterfly Fiesta Cheese Quesadilla Snack

After school snacks are big around my house. I remember when my 3 daughters and I created this snack together. We wanted to make something fun that they could still enjoy while being allergic to nuts. We used several of their other favorite foods and made it allergy friendly for them! Here’s how you can do it also:

Butterfly Fiesta Snack
An allergy-friendly, healthy, fun snack, made for my 3 girls with nut allergies. All cooking and cutting needs to be done by an adult.
  1. 2 tortillas (allergy option: use gluten free)
  2. Handful of shredded cheese (allergy option: use hummus instead)
  3. Black Olives
  4. Celery
  5. Sweet mini bell peppers: red, orange, yellow. Cut into slices. (adult)
  1. Melt shredded cheese between two tortillas and let it cool.
  2. Cut out the butterfly shape with kitchen scissors. TIP: to make a simple set of wings, cut the tortilla in half, then cut 2 "B" shapes. So simple!
  3. Cut olives in half and place in row down center of tortillas.
  4. Decorate the wings with slices of fresh, sweet, mini bell pepper rings.
  5. Use small piece of celery to finish the antennae of your beautiful butterfly.
